VINEYARD
This wine features fresh Tempranillo grown in two remote areas that have altitude and late harvesting in common. These grapes tend to be harvested in the fourth and final week.
One area features the micro-plots with their “heroic” viticulture on slate soils in the gullies of Canejá and Carnanzú (Linares Valley).
The other comprises the highest plots in the Sierra de Yerga on chalky soils.
CLIMATIC YEAR
This has proven to be a historic vintage where the impeccably healthy grapes were harvested and found to have a lower pH than usual.
Despite being a dry vintage, the rainy days were very well distributed and the vineyard did not suffer water stress. The temperatures were very mild during the harvest, which was an extra added bonus for the good health of the grapes.
PREPARATION
Given when grapes ripen in these vineyards, it is quite common to organise manual harvesting on cool mornings. This allows us to vat these destemmed grapes at temperatures of around 10ºC, thus enabling extended maceration prior to starting alcoholic fermentation. With short spells in the vats we obtain highly aromatic wines with intense colours.
TASTING NOTES
COLOUR
Medium-high intensity, red-violet.
AROMA
Intense, with a good balance between red fruits, blackberry, and maraschino cherries, with hints of dairy and licorice.
ON THE PALATE
Fruity and structured.
SERVING RECOMMENDATIONS
Consume at a temperature of 12ºC.
PAIRING
Cold meats, semi-mature cheeses, blue fish, some white or even roasted red meats, such as kid or lamb. Fine with mushrooms and fish in sauce.
