Wine made using Tempranillo 60% coming from fourty-year-old vineyards with very high density and garnacha 40% coming from vineyards those according to family references, are more than eighty years old.
How indicates its name, this wine comes from selected grapes, because only with care obtaining these grapes wines like that will be reached. In winery, grapes are elaborated appart removing the stalk, surmounting in tanks and a macerating property to obtain the best of grapes. The fermentation temperature was between 30ºC and 32ºC. The largest time of maceration leads us to extract great arome and colour potentials their complexity being later increased by the malolactic fermentation, and softened with the permanence in oak cask. The ageing process of this wine was eight-teen months in new american and french oak cask besides one year in bottle, approximately. Later, this wine was bottled without any type of filtration or treatment of clarify to keep the essential of the variety already obtained during the elaboration and ageing.
Deep cherry colour has evolved to roof tile. Powerfull and very spiced nose remembering dry plum, vainilla and licorice. Course of time has given wine fragrance to chocolate, sweet. Complete, well-polished tanning and velvety in the mouth, with an intense after-taste marked by toffee and toasted. Very pleasant finish.
Cooked or roasted meat. Iberian cold meat, some desserts such as “rusos de Alfaro”.
